This particular lot of Yellow Catuai has been enhanced by the producer using anaerobic fermentation for 120 hours in sealed barrels fitted with one-way valves, followed by sun-drying on the patio under parabolic shade cloth for 31 days. Bringing out the best characteristics of the variety.
